Corn Salsa II



A popular accompaniment to an Indian meal is a chopped salad of cucumbers, onions, tomatoes, green chilies and cilantro tossed with lime juice and salt. I added corn kernels and green onions to the mix and came up with this colorful salad.


Ingredients:1 (16 oz.) pkg. frozen corn kernels, thawed
1 English seedless cucumber, peeled & diced 
1 medium onion, peeled & diced
2 medium tomatoes, diced
2 green chilies, diced
2 Tbsp. cilantro, chopped
4 stalks green onions, diced (greens only)
Juice of 1 lime
Salt to taste

Directions:


Toss all ingredients, chill and serve as a salad.
