This blog is dedicated to Mum, my greatest mentor. It is a compilation of simple recipes - Bengali, Indian, Burmese and Continental, among others. All of these recipes have been tested in my kitchen. Most use everyday ingredients found at your local market, but some use specialty ingredients available at Asian and/or Indian markets. Pomfret reminds me of our stay in Bombay (now known as Mumbai). At the time we lived there in the mid '70s, river fish like those found in Kolkata (formerly Calcutta) were hard to come by. It was a huge adjustment to switch to ocean fish among which pomfret was the most palatable. The fishy aroma can be toned down by marinating pomfret in garlic paste.
