Maggi Noodles Omelette

Maggi Omelette
Maggi Omelette with Sriracha
This YouTube video was the inspiration for our delicious lunch today.  It combines my two loves, eggs and noodles. Very simple to make with no more than 5 ingredients (not counting butter, salt and pepper) lunch can go from conception to table in less than 30 minutes. This recipe makes 2 servings.

Dimer Dhokar Dalna - Steamed Egg Cakes in Tomato & Onion Gravy

Dimer Dhokar Dalna
An interesting variation to Egg Curry, eggs beaten with turmeric powder, salt, minced onions, tomatoes and green chilies are steamed in the microwave oven and cooked in a tomato-based gravy.

Dhoka, which means fake or deceptive in Bengali, refers to the vegetarian substitute for meat served on auspicious occasions. Dhokar Dalna is generally made with lentil cakes in gravy. The lentil cake method is tedious and time-consuming requiring soaking the lentils overnight, blending them the next day and cooking the paste until all liquid evaporates, then cutting the cake in cubes and frying the cubes until browned. In the process, a lot of oil is used and a lot of effort expended.

Dimer Dhoka is much simpler to make, although it would not be considered a vegetarian dish. It doesn't require as much preparation and uses a lot less oil.

Deem Ruti or Anda Pau or Egg Sandwiches

Deem Ruti
Making breakfast for a crowd can be daunting. Over the holidays we had a full house which was a lot of fun. Even though I was well-prepared to make several breakfasts, lunches and dinners, the weather did not cooperate. Temperatures were frigid and windows were iced in place and we hate the smell of stale food in the house, so we ate out a lot - a whole lot!

The Stuffing Inside
King's Hawaiian Rolls are fluffy, portion-sized with a slight sweetness that we all love, but reserve for the holidays. These bite-sized sandwiches are sold as snacks by street vendors in all the metropolitan cities in India. We love our omelettes with minced onions and tomatoes and green chilies which makes a delightful filling for the sandwiches. I went a step further and added slices of provolone cheese and sliced chicken to the mix.

Topped and Fried
Once the bottoms of the buns are smothered with the eggs, cheese and chicken, the buns are covered with the top halves and fried in butter. The little snack-sized buns are then segmented and served with ketchup or a variety of chutneys like tamarind or mint chutney, or sweet chili sauce.

Tortilla Omelette Stuffed with Vegetables - Anda Paratha

Bengali Dimer Paratha
For a quick and nutritious lunch, reach for an egg, a tortilla and a cast iron skillet. Kati rolls as they are called in Kolkata, formerly Calcutta, India are a favourite 'grab-and-go' sandwich cooked on demand in small food stalls on the street. These egg rolls are generally filled with mutton, beef or chicken.

I had only me to please today, so I decided to make a kati roll stuffed with minced onions, tomatoes, green chillies and cilantro. We have several sizes of cast iron skillets in our kitchen and there's one in particular which we use for making omelettes and it was the perfect size to accommodate a flour tortilla.

Here's how I made it.

Omelettes in Onion & Tomato Gravy

Omelette Curry
Another dish that brings Mum to mind! Wish she were here to coach me through this, but I think she would approve of my improvisation.

How to Make an Omelette

My husband who does his best to stay out of the kitchen except at meal times, makes an excellent omelette. He taught me to make it and his trick for avoiding brown spots on the outside which is caused by burnt butter is to cook the eggs on the lowest possible heat. So this takes patience, and I've found that if the skillet is covered right after the eggs are poured in, they set faster.

1. Beat two eggs with diced Thai red chilies, salt & pepper.
2. Dice 6-8 plum tomatoes & 1/2 a small onion.
3. Melt a tablespoon of butter in a small iron frying pan.
4. Cook onions and tomatoes in melted butter until onions turn translucent. Do not brown the onions.
5. Turn heat down to low, pour whipped eggs into pan and swirl until it covers the bottom of the pan.
6. When eggs set, fold one side to the middle, fold two adjacent sides over, then the last side.
7. Flip over and cook the folded side for a minute.
8. Meanwhile, in another pan, cook a potato patty until golden brown.
9. Place omelette on one side of a toasted muffin and the potato patty on the other half and serve with sweet chili sauce.

Goes great with a piping hot mug of coffee or tea!
