Eggs in Red Pepper Rings for Two

A unique and delicious way of preparing eggs for breakfast or any time of day.
The red pepper slices can be replaced with or served along with green, orange or yellow peppers. 


Ingredients:

2 eggs
1 English muffin, toasted
2 slices red pepper
2 slices tomato
1 Tbsp. butter
salt & pepper to taste

Directions:
  1. Heat skillet over medium heat and melt 1/2 Tbsp. butter.
  2. Place red pepper rings in pan and break an egg in center of each.
  3. Sprinkle eggs with salt and pepper to taste.
  4. Cover and cook over low heat until yolks are cooked.
  5. In a separate frying pan, heat remaining butter and fry tomato slices.
  6. Sprinkle tomato slices with salt and pepper.
  7. Place tomato slice on each half of a toasted muffin & top with an egg.
  8. Serve immediately.
