Beet & Cucumber Salad with Yogurt Dressing |
½ seedless English cucumber, diced
1 small beet, peeled and finely grated
1 small onion, peeled and finely grated
4 oz. Greek yogurt
salt to taste
Directions:
- Whip yogurt with onion and salt.
- Stir in beets and cucumber.
- Transfer to serving dish and chill until ready to serve.
