Stir-Fried Catfish Fillets and Potatoes

I had a few pieces of catfish fillet in the freezer so decided to add half a russet potato and rustle up a quick stir-fried dish. This goes well with both rice or Indian bread.

Ingredients:
5-6 pieces of filleted catfish
½ russet potato, peeled and cut in thick wedges
1 large onion, cut in 8 pieces
4-6 cloves garlic
1 large tomato, diced
1 tsp. Kashmiri mirch/paprika or chili powder
4 Tbsp. vegetable oil
1 serrano pepper, diced
1 serrano pepper, sliced
salt to taste

Directions:
  1. Heat oil over medium-high heat and brown potatoes.
  2. Blanch onions and garlic in a cup of boiling water.
  3. Drain and blend to a paste along with tomatoes and chili powder.
  4. To potatoes in skillet, add diced peppers, fish pieces and onion-garlic paste.
  5. Cover and simmer over medium to low heat until oil resurfaces.
  6. Adjust salt to taste and transfer to serving dish.
  7. Garnish with sliced serrano peppers and serve with steamed Basmati rice.
