Magur Maach Alu Makha Makha |
5-6 pieces of filleted catfish
½ russet potato, peeled and cut in thick wedges
1 large onion, cut in 8 pieces
4-6 cloves garlic
1 large tomato, diced
1 tsp. Kashmiri mirch/paprika or chili powder
4 Tbsp. vegetable oil
1 serrano pepper, diced
1 serrano pepper, sliced
salt to taste
Directions:
- Heat oil over medium-high heat and brown potatoes.
- Blanch onions and garlic in a cup of boiling water.
- Drain and blend to a paste along with tomatoes and chili powder.
- To potatoes in skillet, add diced peppers, fish pieces and onion-garlic paste.
- Cover and simmer over medium to low heat until oil resurfaces.
- Adjust salt to taste and transfer to serving dish.
- Garnish with sliced serrano peppers and serve with steamed Basmati rice.
