Burmese Shwe Htamin - Rice Dessert Bars

Burmese Shwe Htamin
This Burmese dessert was inspired by a Facebook member, Corinne Watson, of our Burmese food group (Burmese Food Lover's Kitchen). I made several modifications to her recipe because I wanted to make coconut a more prominent ingredient and also used roasted sesame seeds as an additional garnish.

Ingredients:
1 cup glutinous rice
2 cups coconut milk
4 lumps jaggery/gur
   or 4 Tbsp. brown sugar
2 Tbsp. fresh coconut, grated
2 Tbsp. toasted sesame seed, coarsely ground with salt
Pam baking spray

Directions:
  1. Cook rice in coconut milk until tender and all liquid is absorbed.
  2. Melt jaggery or sugar with a little water in the microwave for 3 minutes.
  3. Grease a platter with a few squirts of Pam baking spray.
  4. In a large bowl, mash sticky rice with melted jaggery.
  5. Spread and press evenly into greased platter and cut in square shapes.
  6. Sprinkle with grated coconut and ground sesame seeds and serve.
