3 Ingredient Ice Cream - Coffee Almond Crunch

Coffee Almond Crunch Ice Cream
Get ready for a new dessert experience! There is no cream or any dairy product in this ice cream and it also has no added sugar. That makes it diabetic-friendly which makes me very happy. I saw this concept on Pinterest some time ago but only today got around to trying it out. It uses just 3 ingredients, is very simple to make and tastes really good! But best of all, there's no need to haul out that ice cream maker.


Ingredients (makes 1 scoop)

1/2 a large ripe banana, sliced
1/8 tsp. instant coffee crystals
1 tsp. blanched & sliced almonds

Directions

  1. Freeze banana slices for 15 minutes.
  2. Take out of freezer and mash banana with instant coffee crystals.
  3. Freeze in an airtight container for another 15 minutes.
  4. Take out of freezer and mix with the nuts.
  5. Fold, lifting ice cream from bottom to the top to resemble a scoop.
  6. Transfer to serving dish and freeze again until ready to serve.
Note: I used a seedless banana. If that's not available where you live, make sure to remove the seeds.
