Burmese Stir-Fried Rice Noodles
 with Minced Meat
A Burmese video posted on Facebook provided the inspiration for this recipe. It was super simple to follow and needed just a few often-used ingredients that I regularly stock in my pantry. 

To make things easy on myself, I purchase substantial quantities of ground chicken, brown the lot in some oil, crumble and freeze it for future use. It's quick and easy to assemble the ingredients, when needed, if the minced meat is already cooked.

Ideal for lunch or if unexpected guests drop by, this is one dish that I'll be making often.
Stir-Fried Glass Noodles
 with Minced Meat



Ingredients

1 lb. rice or glass noodles
1/2 lb. minced meat
2 Tbsp. vegetable oil
3 Tbsp. fish sauce
2 tsp. sweet/thick soy sauce
1 Tbsp. sugar
3 eggs
3-4 stalks green onions, cut into 2" lengths
2-3 hot chili peppers, sliced

Directions
  1. Heat oil over medium-high heat, brown and crumble minced meat.
  2. Season with sugar, fish and soy sauces.
  3. Gently separate fresh rice noodles, add to meat and combine.
  4. Make a well in the center and break eggs into it.
  5. Allow eggs to set, stir and scramble into noodles and meat.
  6. Garnish with green onions and chilies, and serve.
