Egg and Onion Salad

Dressed In Mustard Oil
A suitable side dish to accompany biryani or khichuri, this simple egg salad is dressed in mustard oil. The original recipe was posted in a food group on Facebook. This was made with a couple of changes to that recipe. 



Ingredients
4 hard-boiled eggs, peeled and cut in quarters
1/2 onion, sliced
4-6 stalks cilantro, minced
1 stalk green onion, minced
1 green chili, seeds removed and minced
1 tsp. ground black pepper
1 tsp. salt or to taste
2 Tbsp. mustard oil

Directions
  1. Arrange eggs and sliced onions in a serving dish.
  2. Sprinkle remaining ingredients over eggs.
  3. Mix together very gently and serve chilled.
Serve as a starter or side dish.

  1. Looks delicious - would love to try it sometime - can the onions be lightly fried or would it become too soggy?

    1. I'm sure fried onions would be fine in this salad. Just make sure to drain the excess oil off on paper towels before adding to the salad.
