Here's another tasty way to prepare eggplant. The internet is a prolific source for recipes, and this was featured in a video by Banglar Rannaghor. One modification I made was to use imli chutney in place of tamarind paste. A technique that impressed me was to toss and marinate the eggplant pieces with spices and 2-3 tablespoons of water before frying. This made a big difference in the time it took for the eggplant pieces to brown without absorbing a vast quantity of oil.

I used a big globe eggplant that was cut in half and sliced. Any variety of eggplant would work for this recipe, so use whatever is at hand. Serve as a side dish, accompanied by any Indian bread or hot, steamed rice.

My brother sent me this photograph of his Begun Panch Phoron. The five spices are cumin, fennel, nigella, mustard and fenugreek seeds. These seeds are sputtered in oil for tempering and more are later roasted and ground to add flavour to the stir-fried eggplants. Cut the eggplants in bite-sized pieces. Bachu cut them in long pieces. I diced mine.

Ghoti refers to the people of West Bengal. Kalai/urad dal is good for controlling diabetes because of its alkaline nature. This ginger and 5 spice perfumed dal was a popular dish prepared in my sister's 'shoshur bari' or in-laws' home. During one of our frequent phone calls, she gave me this recipe or rather what I remember of her instructions.

Eggplant Salad with Yogurt Dressing

Raita is an Indian side dish or salad of yogurt containing chopped cucumber or other vegetables and spices. It is usually served alongside rich dishes like biryani, pulao or with kababs. The yogurt dressing helps to tone down spicy dishes, soothing the palate with its creaminess. Greek yogurt is a good option, as opposed to regular unflavoured yogurt, because it is already drained of its whey, making it thick and creamy.

Cutting the eggplants into thick rondelles and lightly frying them preserves the integrity and texture of the vegetable, otherwise eggplants tend to break down easily and turn mushy. Marinating the rondelles of eggplant with salt and powdered spices like turmeric, fennel and Kashmiri mirch (paprika) serves to saturate the eggplants with flavor from the inside out.

To keep the yogurt dressing from curdling or separating, it is added and stirred into the eggplants after removing the skillet from the heat source. This salad tastes best if it is chilled in the refrigerator prior to serving.

The difference between Phool Kopir Ghonto & Phool Kopir Pulao, in my humble opinion, lies in the ratio of cauliflower to rice. In a Ghonto, the ratio of cauliflower to rice is 2:1, and in a Pulao the ratio is 1:2. By adjusting the amount of gravy, it can be served wet or dry. This is a vegan and vegetarian dish that can be served on auspicious occasions.

I first had Phool Kopir Ghonto at my sister's place. She follows a vegetarian diet one day a week and has a amazing repertoire of vegetarian dishes. This dish has stuck in my memory and even though I haven't followed her recipe exactly, it tasted wonderful!

Panch Mishali Tarkari - 5 Vegetables in Coconut Cream

Gather together all the vegetables you can find, including bits and pieces in the fridge, to compose this simple and satisfying stew. I used a sweet potato, an eggplant, pui shaak with data (malabar spinach), chayote squash and potatoes, but any five or more vegetables will do. After all, who's counting?

Coconut milk makes it extra special by imparting a creamy quality to the vegetables.

The box of kale medley is triple-washed so it can be used straight away without washing. The mixture of young greens are tender and full of flavour. Dried red chilies are deseeded by splitting in half and shaking out the seeds. This reduces the spiciness. Watch them closely while they're sizzling so they don't burn which could reduce you and your audience into a coughing frenzy.

Greens are an essential part of the Indian table. In Bengal they are prepared in a variety of ways of which this stir-fry is the simplest. More exotic forms include meat, poultry, fish heads or homemade cheese (chana/paneer). The general rule is that if you can eat the fruit off the vine, the leaves are also edible.

However, I have first-hand knowledge of how dangerous it is to take this too literally. A member of my extended family watched his wife make a strawberry-rhubarb pie and noticed she was discarding the lovely greens, she had no idea why. He asked her to chop them up and prepare them the same way she would stir-fry spinach. The 'spinach' was relished at dinner that night. Not much later they both developed severe stomach aches and diarrhea which sent them to the emergency room of the closest hospital. After receiving treatment and armed with drugs, they returned home totally famished. They raided the fridge and ate more rhubarb greens before taking to their beds. Lo and behold, they took ill again and headed to the emergency room once more. This time they were grilled by the doctor of all that they had eaten in the last 24 hours. He and his staff were horrified to hear about the rhubarb greens which are extremely poisonous to human beings. Yes, the stalks can be eaten, but never the greens!

This side dish goes perfectly with hot rice or any type of Indian bread.

Kumro Bati Chorchori - Simple Stir-Fried Pumpkin/Butternut Squash

Kumro (pumpkin) Bati (dish/one-dish) Chorchori (stir-fried vegetable) is a delectable Bengali preparation with pumpkin or butternut squash. In North America, the latter is far more readily available and makes a good substitute for pumpkin.

A cross-section of each type of pumpkin makes it recognizable in the supermarket. Butternut squash is a hard winter vegetable which I generally avoid because it is so difficult to peel and chop.

Imagine my surprise and delight when I came across this 3 lb. bag of chopped butternut squash at our membership supermarket. It takes away all the intimidation presented by this hard vegetable and makes it more of a staple in my kitchen.
Frozen Cubes 
After heating and tempering the oil, these frozen cubes of butternut squash were taken straight from the freezer into the frying pan. Once they thawed, they cooked in a jiffy with minimal spices.

The dish was ready in less than 20 minutes! Makes a colourful and lovely side dish, served with hot, steamed Basmati rice or any Indian bread.

Malabar spinach or basella is labeled Indian Spinach in the Asian markets. In Bengali, this spinach is called pui shaak and it is one of my favorite vegetables. In this dish the spinach has been stir-fried with shrimp, Japanese eggplant & sweet potatoes with a tempering of Bengali 5-spice or panch phoron seeds. It is seasoned simply with ginger paste and roasted panch phoron powder. For a vegetarian or vegan dish, omit the shrimp.

Spinach is always available at their peak of freshness in supermarkets and Indian marktets but, for this dish, I prefer to use frozen spinach that is already chopped. 


Lentil dumplings, known as 'bori' in Bengali, are mashed lentils that are formed into small tear-drop shaped dumplings which are sun-dried. Boris are flavoured with asafetida and seasoned with salt. They are deep fried until golden brown and soaked in hot water to soften. Since some of the flavour leaches into the water in which they are soaked, the soaking liquid should be saved and added back into the dish that is being prepared, to maximize on the taste.

Stir-Fried Bitter Melon & Eggplant

My trip to the Asian market a couple of days ago proved fruitful because I found a tray of already sliced bitter melons.They were of the Chinese variety which have a smoother and lighter skin than their subcontinental counterparts.

Chinese bitter melons are also less bitter than the subcontinental variety. The long and slender Japanese eggplants go so well when they are stir-fried along with bitter melons.

This dish is a common side served as a first course of a Bengali meal. It's so simple to make and is considered to be beneficial in lowering blood sugar levels. It tastes perfect with any form of Indian bread or steamed Basmati rice.

Ingredients:
3 bitter melons, cut in half, deseeded and sliced
2 Asian eggplants, cut in half and sliced
4 Tbsp. vegetable oil
1/2 tsp. whole Bengali 5-spice or panch phoron (equal proportions of fennel, nigella, fenugreek, cumin and mustard seeds)
salt to taste

Directions:
  1. Toss both vegetables with salt to taste.
  2. Heat oil over medium-high heat and sputter 5-spice.
  3. Stir-fry bitter melon and eggplant slices until golden brown.
  4. Adjust salt and transfer to a serving dish.
Serve with chapatis or Basmati rice.

Panch mishali dal is a welcome change from the simple dal that is served on a regular basis. There is a richness to this dish which comes from combining different varieties of lentils. Any combination of lentils that is available can be used. Because it is hearty and sticks to the ribs, this dish is best suited to cold and/or rainy weather.

Panch Phoron or Bengali 5 Spice Mixture

Bengali is the language spoken by the people of Bangladesh and in the state of Bengal in India. 

Known in Bengali as panch phoron (panch=5 & phoron=tempering), this mixture of spices comprises equal quantities of black mustard (shorshe/sarson/rai) seeds, cumin seeds, fennel seeds, fenugreek seeds and nigella (kalo jeera/kalonji) seeds. Panch phoron is used for tempering Bengali vegetarian and non-vegetarian dishes.  


Randhuni or Wild Celery Seeds
In the more traditional panch phoron, randhuni (wild celery seeds) is used in place of black mustard seeds.The latter are more readily available than randhuni which is difficult to procure outside the state of Bengal in India. 



Roasted panch phoron powder is used to flavor vegetarian dishes and as a garnish in those same dishes as well as in chutneys, such as Tomato Date Chutney and raitas, such as Fuji Apple Raita. Take a tablespoon of each of the 5 spices and toast them in a dry skillet until fennel seeds turn brown and mustard seeds turn white. Grind to a coarse powder in a coffee grinder. This lovely, fragrant spice must be cooled and stored in an airtight bottle. It will remain fragrant anywhere from 6 months to a year.



Empty McCormick's spice bottles make great storage containers for my whole and powdered Indian spices. The bottles and lids are washed in the dishwasher, allowed to air-dry overnight and saved for this purpose. A label-maker comes in handy to help identify the contents of these recycled bottles.



It's a good idea to keep a coffee grinder specifically for grinding spices, but if you have to use it for grinding coffee as well, here's an effective way of cleaning the grinder and removing the aroma of spices. Empty the coffee grinder and clean both chamber and lid thoroughly with a paper towel. Add a teaspoon of Arm & Hammer baking soda to the grinder and pulse several times. Empty the baking soda into the sink and clean the chamber of the grinder and the lid thoroughly with a paper towel. Keep the lid off overnight to air the chamber of the grinder and it should be ready to grind coffee beans.

Red Lentils with Cucumbers

Mum's favourite way of preparing red lentils was with onions, tomatoes & garlic. She would sometimes add cucumbers to it, but always peeled them. As a shortcut, I decided to leave them unpeeled and was surprised at how good it tasted. The cucumbers retained their shapes, added a bite and weren't mushy at all.
