Sometimes, all it takes is a very simple soup to satisfy midnight or any-time-of-day cravings. For this reason, the freezer is always stocked with Korean mandu or  dumplings that are available all over town. Baby bok choy freezes well, so the leaves are separated, washed, dried and packaged in Ziploc bags for the freezer. Fresh Pad Thai noodles, available at Asian markets, are also a staple item stored in the fridge. 

This soup uses only 4 ingredients, not counting the seasonings, and takes no more than 10 minutes to assemble.

Chicken Feet and Fish Ball Laksa
For a speedy lunch yesterday, a package of instant laksa noodle soup was simmered with laksa sauce and coconut powder (both included in the package of noodle soup), 2 chicken's feet, 2 bulbs of baby bok choy and 6 fried-frozen fish balls. A heartwarming and delicious lunch was ready in 5 minutes!

All the ingredients were picked up at our local 168 Asian Mart, a top quality supermarket in which to spend an afternoon. The chicken's feet were cleaned and pre-cooked with green chili peppers and red chili sauce. There are lots of other exotic cooked goodies in that section!

Stir-Fried Tofu & Bok Choy

Stir-Fried Tofu & Bok Choy
A quick and easy stir-fry that took under 15 minutes from stove to table, was our dinner last night. Extra-firm tofu is a staple in our fridge along with simple sauces like teriyaki and oyster sauces. A dash of sesame oil, as a garnish, made a delicious gravy that went well with a steaming bowl of rice.
