Sweet potatoes were always a favourite vegetable even as a child. One of my earliest memories is walking around with a boiled sweet potato and munching on it like candy. Bhortha is a mashed vegetable or fish preparation, so it's better to microwave or bake the sweet potatoes rather than boiling them. This dish is served as a first course during a Bengali meal and tastes best paired with steamed rice.
1 large sweet potato, washed well
1 small onion, minced
1 green chili, minced
2-3 stalks cilantro, minced
2 Tbsp. mustard oil or butter
salt to taste
Directions
- Pierce sweet potato all over with a fork and rub with vegetable oil.
- Wrap sweet potato in wax paper and microwave for 5 minutes.
- Turn potato over and microwave for 5 more minutes or until soft.
- Mash well with onions, chili, cilantro, mustard oil and salt to taste.
Serve as a side dish with hot, steamed rice.
