Golden Fried Rice |
Left over white/steamed rice, unless cooked at home, usually turns hard and inedible the next day. I freeze the left over rice in Ziploc bags until I'm ready to turn it into fried rice.
Ingredients:
2 cups cold cooked white rice (preferably short-grain sticky rice)
3 eggs, beaten
2 Tbsp. vegetable oil + 1 Tbsp. butter
1 large yellow onion, minced
4-5 cloves garlic, chopped
1 cup chopped ham
1 carrot, peeled and grated
8 fresh button mushrooms, chopped
1 green chili, minced
1/2 tsp. Ajinomoto
2-3 stalks green onions, chopped
salt to taste
Directions
- Remove all lumps from the rice with your fingers.
- Add beaten eggs and salt to rice, mix until rice is coated well and set aside.
- Heat oil and butter, stir-fry onions and garlic until onions turn translucent.
- Add ham, carrots, mushrooms, green chili and Ajinomoto to skillet and stir-fry until vegetables soften.
- Add rice and eggs to pan and toss until eggs set.
- Garnish with green onions and serve.
