Creamy Yogurt Cake

 

Yogurt Cheese Cake

A creamy, practically guilt-free cheese cake that substitutes cream cheese with yogurt. I followed a Burmese video to make the cake. I was impressed with how delicious the cake turned out considering the minimal number of ingredients used.

Ingredients

1/2 cup cornstarch
1-1/2 cups unflavoured Greek yogurt
4 eggs, separated
1/2 cup sugar
2 limes, zested
1 tsp. baking soda


Directions

  1. Preheat oven to 350°F.
  2. Beat egg yolks and sugar until sugar dissolves.
  3. Add yogurt and beat until thoroughly combined.
  4. Add cornstarch and baking soda and beat again.
  5. Beat in lime zest.
  6. In another bowl, whip egg whites until stiff peaks form.
  7. Fold into batter in 3 batches until smooth.
  8. Lay a circle of parchment paper in the bottom of a spring-form pan and grease sides and bottom of pan.
  9. Pour batter into pan, shake and knock against table to remove bubbles.
  10. Bake in a 350°F oven for 40-45 minutes until toothpick comes out clean.
  11. Bring to room temperature and refrigerate overnight or at least 45 minutes.

Slice and serve.
