Chicken Tater Tot Casserole |
A Chicken Pot Pie turned inside out, with the potatoes on the outside instead of inside, this fun casserole will become a favourite with young and old alike. It's quick to assemble and a great meal to serve the family on busy days like the day before Thanksgiving when preparations are underway for a big meal the next day.
2 cups rotisserie chicken, cubed
1 pkg. frozen vegetables comprising corn, carrots, peas and green
beans
1 (10-1/2 oz.) can cream of chicken soup or make your own
1/4 cup milk
1 small onion, minced
1 tsp. poultry seasoning
1/2 tsp. fresh ground black pepper
40-45 frozen tater tot crowns
Directions
- Preheat oven to 400°F.
- Combine chicken and vegetables with, soup, milk, onion, poultry seasoning and pepper in a mixing bowl, stir well and spread evenly into a round Pyrex baking dish.
- Cover with tater tots.
- Bake at 400°F for 50 minutes, until filling bubbles and tater tots are golden brown.
