Suji Toast - Cream of Wheat Toast

 

Suji Toast

There are a myriad recipes for this popular breakfast dish on the internet. The video that inspired me is displayed at the end of this post. I found toasted suji at the Indian market which is what I used to make this. Our neighbourhood supermarket bakes their own Italian bread which was perfect because the crusty slices hold their shape and acted as a sponge for the topping. And according to my nephew, 'Iz bedder wid budder', so I used butter instead of oil to fry the toasts. The leftover batter can be made into little dosas. With less than 10 ingredients, breakfast is ready in under 30 minutes. 

Ingredients
5 slices bread
1/2 cup suji or cream of wheat
1 (5.03 oz.) tub of Greek yogurt
salt to taste
1 onion, minced
1 tomato, minced
1 green chili or to taste, minced
1 handful cilantro, minced
enough tomato ketchup to smear on bread

Directions
  1. Combine suji with yogurt and salt. Mix well, adding water as necessary to obtain a pancake-like consistency. Set aside for 15 minutes until thickened.
  2. Add 3/4 each of onions, tomatoes, chilies and cilantro to the batter and stir well.
  3. Spread ketchup over each slice of bread, followed by 3 tsp. of suji batter to edges of bread.
  4. Dot each slice with remaining onions, tomatoes, chilies and cilantro.
  5. Heat butter in a non-stick skillet over medium heat, place bread, batter side down.
  6. Butter other side of bread and fry each toast for 10 minutes, flipping over after 5 minutes.
  7. Serve with sriracha, sweet chili sauce or any chutney of your choice.
