Green Peppers in Peanut Sauce |
Any and all varieties of bell peppers taste good cooked in this tangy peanut sauce. Add as much chili powder and dried red peppers as you can handle. I kept them to a minimum to suit my family.
3 green peppers, seeds removed and cubed
1 large onion
4 Tbsp. vegetable oil
3 dried red peppers
2 green onions, minced
3-4 sprigs cilantro, minced
salt to taste
Peanut Sauce
1/4 cup peanut butter
2 Tbsp. sesame oil
2 Tbsp. soy sauce
1 Tbsp. rice vinegar
2 tsp. ginger paste
1 tsp. garlic paste
1 tsp. maple or coconut syrup
Juice of 1/2 lime
1/2 tsp. chili powder
salt to taste
2 Tbsp. water, or as need
Directions
- Combine all ingredients for peanut sauce, except water.
- Add water to sauce, beat until smooth and set aside.
- Heat oil over medium-high heat, fry dried red peppers, remove from skillet and set aside for garnishing.
- Stir-fry onions until translucent, add bell peppers and simmer over medium heat until softened.
- Add peanut sauce, stir well to coat peppers with sauce and simmer for 3 minutes.
- Adjust salt to taste and garnish with green onions, cilantro and dried red peppers.
