Balsamico di Modena |
Besides dressing a salad, it would be great as a marinade for chicken or fish and drizzled on as a garnish right before serving, as well as a dressing for fruit salad.
1/4 cup balsamic vinegar
3 tsp. sugar/Splenda (or to taste)
1 Tbsp. extra-virgin olive oil (EVOO)
pinch of salt
Romaine lettuce, torn in bite-sized pieces
1 beefsteak tomato, cut in bite-sized pieces
Directions:
- Dissolve sugar in balsamic vinegar.
- Beat with EVOO and salt.
- Drizzle over lettuce and tomatoes & toss to dress.
Serve chilled.
