These potatoes taste great with chapatis/tortillas or with steamed Basmati or other long grain rice.
1 cup frozen Ore-Ida hash brown potatoes
2 Tbsp. extra light olive or other vegetable oil
1 medium onion, diced
1 hot green chili, diced
1 tsp. ginger, diced
1/4 tsp. mustard seeds
1/8 tsp. turmeric powder
1 stalk curry leaves or 1 tsp. chopped cilantro
1/4 cup water, set to simmer
salt to taste
1/2 tsp. ghee
Directions:
- Pour oil into a microwave dish & sprinkle with mustard seeds & turmeric.
- Cook on high power for 1-1/2 minutes & take out of microwave oven.
- Add onions, green chilies, ginger, potatoes & stir well.
- Cook on high power for 1-1/2 minutes & take out of microwave oven.
- Add curry leaves/cilantro, simmering water & salt to taste & stir well.
- Cook on high power for 1-1/2 minutes & take out of microwave oven.
- Garnish with ghee & serve with chapatis or steamed rice.
