Most use everyday ingredients found at your local market, but some use specialty ingredients available at Asian and/or Indian markets. Mayz' Taco Salad
Mayz spent the evening with us last week and on the way home I asked him, 'What is the most interesting thing you ate since we last saw you?' and he thought about it for a while and replied, 'Taco Salad!' With a vigorous nod of his head he said, 'It was very good!' He had it at home, his Mama made it and he gave me a list of everything in it. What he liked best about the Taco Salad were the Nachos that were crushed and mixed in with everything else. This recipe is dedicated to Mayz, who is GrandBoy #2, age 6.
Ingredients: 1 lb. ground chicken 4 Tbsp. vegetable oil ½pkg. McCormick's Chicken Taco Seasoning ½ tsp. onion salt ½ tsp. garlic powder
1 head Romaine lettuce, shredded 1 large tomato, diced ½ English seedless cucumber, diced 2 stalks green onions, chopped 10-12 Nachos/tortilla chips, crushed 4 oz. Mexican blend grated cheese 4 Tbsp. mild salsa Sour cream to taste Directions: Brown chicken in oil with taco seasoning, onion salt and garlic powder. Toss everything (except sour cream) into a mixing bowl and stir well. Top with a dollop (or two) of sour cream. Serve with tortillas or nacho chips to scoop up the salad.
