Chocolate & Dried Fruit Truffles |
Sweet Treats for my Valentine |
The original recipe called for almond butter but we meet in a nut-free facility, so that was out of the question. It also used only dates, but we have quite a crowd at these meetings, so I added all the dried fruits in the house (except prunes).
These truffles are simply delicious, are dense and very filling. One is all I could have. This type of dessert is ideal for the winter time or for women who are pregnant to provide strength and energy.
Ingredients:
20 Medjool dates, pits removed and chopped
20 dried apricots, chopped
5 strips dried mango, chopped
½ cup golden raisins
½ cup dried cherries
½ cup dried cranberries
¼ cup sweetened & shredded coconut (e.g. Baker’s)
1 Tbsp. coconut powder
2 Tbsp. cocoa powder (e.g. Godiva’s)
8 coconut & dark fudge Newton’s Fruit Thins
or similar oatmeal cookies
Directions:
- Pulse cookies, cocoa & coconut powder in a food processor into crumbs.
- Pulse remaining ingredients in food processor until it forms a ball.
- Mix all ingredients together and roll into the size of tennis balls.
- Roll in cocoa powder or confectioner’s sugar to coat.
